It was a tongue in cheek joke. Valmont hasn't seen Kibella since she was a child and presumes she would be thin. As 'Cutting the fat' can also mean getting rid of unnecessary things. I.E. - "Let me pretend to be your fiancee so we can get you out of trouble with your Dad."
