Recipe
210g Self-Raising Flour
1/2 tsp Baking Powder / Soda
1/2 tsp Salt
165g Soft Brown Sugar
115g Butter, softened
2 Large Eggs
3 Ripe Bananas, mashed
1. Preheat your oven to 160*C and sift the Flour, Baking Powder and Salt into a mixing bowl, then set to one side.
2. In a separate mixing bowl, cream together the Butter and Sugar; then add the Eggs one at a time, mixing them in fully each time.
3. Peel, slice and mash the Bananas using either a fork or a ricer if you have one, and fold the mashed Banana into the mixture, followed by the Flour until you have a loose cake-like batter.
4. Grease a 2lb Loaf Tin or line with parchment and spoon the batter into the tin. Bake the loaf for 50-60 minutes. You should be able to probe the loaf with a skewer and have it come out clean. Let the Banana Bread rest in the tin for another 20 minutes before removing and letting it cool completely on a wire rack.
From Chris: Remember: the riper your bananas are, the better the bread will taste. You can even take the bread to next level by using browned butter, and if you are looking to make this eggless just add one more banana or unflavored apple sauce (both of which are natural 'binders').
