Delightfully delicate delicious cup cakes to tantalize the tastebuds from the kitchens of
chrismukkah
A little present for
bluenire - you didnt think I was gonna do it, did ya :P
Now the only catch is- er...didn't have the Matcha, its tough to find in my neck of the woods XD
So bear with me folks, I think you'll like this recipe :)
Ingredients:
1 cup all-purpose flour
1 cup cake flour
4 teaspoons matcha powder- I used 2 green tea bags, with two others reserved
1 teaspoon baking soda
1 teaspoon salt
1 1/4 cups white sugar
1 cup vegetable oil*
3 eggs
1 1/2 teaspoons vanilla extract
1 cup sour cream (used light...well, at least its somewhat low calorie...er...yeah :P)
Frosting:
2 1/2 cups confectioners sugar
4 teaspoons matcha podwer (this is where the other two teabags come in)
8 ounces cream cheese, softened
4 tablespoons butter, softened
1 teaspoon vanilla extract
So- to make-
1.) Preheat the oven to 350 degrees F (325 degrees if its a convection oven)
Place muffin liners in a muffin tin. (This is a step I should have done, but skipped- they came out ok anyways :P- done with throwaway muffin tin :3
2.) In a medium sized bowl, sift together all-purpose flour, cake flour, baking soda and salt. Those two tea bags- cut them open, and just dump the leaves right in, and mix it all together. Set aside.
3.) In another separate bowl, beat together sugar, oil, eggs, vanilla and sour cream.
4.) Then, gently fold the wet mix with the dry until it all gets incorporated / combined. Once thats all set, pour the mix into the paper cups that are in the tin, filling them (this makes 12 cupcakes easy folks) and then throw the tins in the oven for a good 15 to 20 minutes or until a toothpick inserted into them comes out clean. Set them out to cool when they're done.
5.) While they are baking- time to make the frosting! sift together confectioners sugar and matcha powder. This I did NOT do- instead- those OTHER two tea bags? I put those in a mug, filled with water, microwaved and made tea with BOTH of them in the same cup (in order to have the green tea flavor stand out)...then poured in about two piping hot tablespoons, mixed with the four tablespoons butter, vanilla and cream cheese.
Er....I might have put in a bit too much tea in the frosting, but I saved it with an extra block of cream cheese I had lying around! Then just use a piping bag...nope, just slathered the frosting right on there :P
Serve and enjoy :)
* UPDATE: Yeah, definitely use 1/2 cup oil, but also, when this is cooked & frosted, leave it to chill in the fridge for about 30 to 45 minutes or so, that way the frosting gets a chance to solidify :3
