It should begin with something simple.
Perhaps just fur to begin. Cheetah fur, for this blond boy. That doesn't mean he'll be a cheetah in any other way, but the fur, the spots, that's the first thing, a light dusting that soon sweeps across everything.

Also, another idea that could be taken separately or in conjunction with the 'fur first' concept: As it's a potion, and he's drinking it, you might think it should affect his mouth first. So, the tongue could change first, or the teeth, or the face growing a muzzle.
If you're looking to play up how unstable this potion really is, all three of these should be different.
Prime tongues to begin with are things like.. a frog or chameleon's tongue, or a giraffe one.
A set of shark teeth, perhaps - or fearsome fangs from something reptilian.
And a cute facade to hide these things in: a bunny muzzle.
Then again, you might not want to go quite so far down the road of 'every part of him becomes different', haha. So perhaps just one of those animals is what the mouth trends towards, as it becomes an animalistic snout/nose.
