
I'm convinced all the anatomically incorrect skeleton decorations at Halloween are just necromancers getting creative.

I don't see why not! My logic for a world with necromancy is that once-living material holds a "memory" of being a live which you can re-invigorate with necrotic energy, so bug husks would certainly qualify. Might even be able to train a whole bunch of dead bugs to gather up into the shape of a golem, though that's probably easier as a druid with living bugs - just ask them nicely!
I red a book that was dealing with giant evil necromantic crabs where they would zombify the whole crab warrior and send it back into combat. and I had the idea of just animating the exoskeleton... and if you did that could you animate the shed shells as well after a molt.
Honestly a molted exoskelton would be rather light and probably a bit brittle but it could be fun
