~FACCC2 Was looking for recipes than were quick, and didn't need a lot of ingredients. Here's one I tweaked from one that was on the back of a box of Tom Yum broth. It's tasty, and boiling the water is the longest step.
1 Egg
5-6 shrimp
2 cloves garlic
1 handful baby spinach
3 mushrooms, sliced
2 tablespoons Tom Yum paste
2 1/2 cups water.
1 nest thin rice noodles
Boil the egg for about 6 minutes. The idea is to have the yolk undercooked, but the rest of the egg firm enough to handle, so you may want to adjust the cooking time depending on your altitude and the size of the egg.
If you're starting with frozen shrimp, thaw according to the directions on the bag. Shell while the egg is cooking, and slice up the mushrooms. You'll want them fairly thin. If you have a garlic press, crush two garlic cloves, or just chop them up if you don't
Set the egg aside once it's done.
Place a nest of rice noodles in a serving bowl. Don't worry about cooking them yet
Bring 2 1/2 cups of water to a boil, then turn to medium heat.
Add 2 tablespoons of Tom Yum paste, and stir until blended. Add the shrimp, spinach, mushrooms and garlic, Cook until the shrimp are done, which will be about 2 minutes. A little more if the shrimp are large.
Once done, pour everything over the noodles. The hot broth will do the cooking. Peel the egg you set aside, and slice it in half to garnish the dish. Enjoy.
If you can get premade Tom Yum broth, you can substitute that for the water and Tom Yum paste.
Peeling an egg:
If you want a peeled egg that's mostly intact:
Roll the egg on a hard surface. Use just enough pressure to crack the shell, because the eggs themselves are kind of fragile when cooked this way.
Peel the shell under cold running water. Let the running water work its way under the shell membrane, and it you do it right, you'll get a perfectly peeled egg.
From Chris: If you are looking for an extra shrimp flavor, leave the tails on or add in shrimp paste (usually found in Asian markets)
