Well, I'll get the ball rolling with the "Cool It" challenge we have going on over at ~faccc2 !
~ hot dog bun or sausage bun of your choice
~ 1-2 precooked lobsters, shelled and picked
~ 2-3 tablespoons of low fat mayonnaise
~ 1 teaspoon garlic salt (or maybe to switch it up, use celery salt and throw in some chopped celery as well for crunch)
~ 1-2 teaspoons dried chives
~ fresh lettuce (very optional, I find that to be "filler" which defeats the whole purpose of making a lobster roll in the first place :P)
All you need to do is get a bowl, chop the lobster into decent bite-size chunks and then mix with the rest of the ingredients -
you can also add in a squirt of lemon to give it more "oomph", then cover it with some plastic wrap and let rest in your fridge for a few hours to incorporate all of the flavors.
Then serve on a bun - I have seen other versions where people also put on ripple chips (plain, barbecue or sour cream and onion flavored) in the rolls as well so it depends on your tastes!
