1 1/2 cups of Flour
3 teaspoons of Baking soda
1 tablespoon of sugar
Add salt (optional)
1 1/4 cups of milk
3 tablespoons of melted butter
1 egg
Chocolate chips or fruit of your choice for extra flavor
Shift your dry ingredients together in a bowl, after add your milk, butter, and egg, and mix it together. Instead of a traditional mixer, I used a whisk and mixed it myself. I felt that more authentic, not many people do that anymore. Place something like butter or oil in your pan, turning on medium-low heat (if it's too hot you'll be in trouble), and pour about 1/4 cup of your pancake batter in your pan. Lastly, cook your sausage however you wish and serve it with your pancakes!!!
From Chris: I would say the salt is essential in this recipe, since it acts with the baking soda as a leavener. (Though I have seen other recipes use seltzer or fluffed up egg whites to give the pancakes a fluffier texture.)
On my end, I've always put in a capful of vanilla for richness, though with other recipes I've seen lemon zest added or ricotta (or both) in the mix as well.
