
Well, when you still have one big fat zucchini left from the garden, you gotta cook it somehow!
Ingredients:
~ One big fat zucchini
~ 1 1/2 cups Italian flavored breadcrumbs (or use plain, or whatever)
~ 2 eggs
~ 1 jar premade sauce
~ 1 bag shredded mozzarella
~ 1 to 1 1/2 tablespoons olive oil
~ salt and pepper to taste
To make:
If your zuke is big enough, cut it at an angle in one inch slices
Get your mise en place together - one bowl for the eggs (that are cracked open and stirred) and one bowl for the crumbs
Get a large baking pan and grease the bottom with the olive oil
Coat the zucchini with the eggs, then dredge with the breadcrumbs
Get a large baking pan, grease the bottom of the pan with olive oil so that your zukes don't stick
Then work in layers - the zucchini, the sauce, the cheese and then at the end top with the mozzarella so you get that gooey goodness
Bake in the oven at 375 F for 25 - 30 minutes until GBD
And in the holy words of the Patron Saint of BACON™: "DEVOUR!!!!"
