The start of every day should include a good breakfast. This looks like a pretty good breakfast to me from the kitchens of

Talk about artery clogging meals, this can be one, and is scrumptous to boot!
Serves 3-4 depending size of omelet
12-18 eggs
3 medium potatoes diced and lightly fried
1 each red, yellow, orange and green bell pepper (cored, sliced and diced)
1 medium sweet yellow onion - diced (Vildalia works good here)
3 Roma tomatoes (diced)
Shredded cheese of your choice
1 1/2lbs cooked, ground sausage
Place eggs into blender and whip until thoroughly blended.
Place 1-2 tsp of butter in medium saute pan making sure to coat entire surface, over a medium flame. pour approximately 2c of the whipped eggs into the pan making sure to spread evenly over the the surface, gently rotating pan to cook evenly. When the eggs are about 75% cooked, place ingredients over one half of the eggs. Fold empty side over to cover the stuffing, carefully flipping after 1-2 minutes.
Serve hot with sausage, hashbrowns and biscuits and enjoy
