Meatloaf
2 cups water
1 teaspoon salt
1 cup lentils
1 small onion, diced
1 cup quick-cooking oats
1 cup Monterey jack cheese
1 egg, beaten
4 ounces tomato sauce
1 teaspoon garlic powder
4 teaspoons dried parsley
.5 teaspoon salt
.25 teaspoon pepper
1. Add salt and water to boil in a saucepan.
2. Add lentils and simmer covered 25-30 minutes until the lentils absorb most of the water.
3. Drain and mash the lentils and allow to cool.
4. Stir in onion, oats, and cheese until mixed thoroughly, then add egg, tomato sauce, garlic, basil, parsley, salt, and pepper and mix again.
5. Spoon into a loaf pan that has been well-greased.
6. Bake at 350F for 30-45 minutes until the top of the loaf is dry, firm, and golden-brown. Cool on a rack for about 10 minutes before serving.
