
Here we have one of my favorites, yet something I hadn't posted yet... Peanut Butter Cookies!
I know, some have nut allergies... BUT, well, I still like peanut butter. It's good, nom! Especially with chocolate.

Cookies, I love cookies, and I love peanut butter, and so these are just great for that combination! This is a very basic peanut butter cookie recipe that takes well to adding ingredients, like other nuts or chocolate chips.
Here I added a little ganache to the top of a few because I love that chocolate and peanut butter combination.
This recipe uses weights and prepares a good four to five dozen cookies.
Ingredients:
12 oz Butter (Three sticks)
8 Oz Brown Sugar
8 Oz Granulated Sugar
1 Tsp salt
12 oz Peanut Butter

4 Oz Eggs (About three)

1 Lb All-purpose Flour
1 Tsp Baking Soda
1 cup peanuts, shelled. (Optional)
We’ll be using the creaming method for these cookies. The Creaming Method involves combining the butter and sugar elements first and beating them together till they have some air incorporated in them.
Take your Butter, Sugars, Salt, and Peanut Butter and combine on medium high speed for about four minutes until the mixture is smooth and lightens in color.
Scrape down bowl.
Slowly add in the eggs, one at a time, while mixing on medium speed. This creates an emulsion by going slowly. Allow to mix for several minutes. Scrape down bowl.
Combine together Flour and Baking Soda.
Start up mixer on low speed and slowly add in the Flour and Baking soda to the sugar mixture. Let mix until most of the flour is wet. Add in Peanuts and chocolate chips, let mix just enough to incorperate or fold in by hand.
Scoop out small balls and place on a baking sheet. Bake at 350 Degrees for about ten to twelve minutes or until the edges lightly brown.
