It's still hard to believe that he's somehow already 6. Seems like just yesterday that we were doing everything for his legs and it still doesn't seem that long ago that we had gotten him. We had taken him out earlier with his brother and gotten them both hotdogs. Along with everyone flocked to both of them and gave them all the attention they could want.
This is the birthday cake that I had made him. Needles to say, he devoured the piece we gave him.
But, I figured I'd post the recipe for it here. Heck, you could have it if you wanted, especially since it's dog safe.
Also this recipe is for one cake. I doubled it, so I could do a double layer cake.
Ingredients:
cake:
1 cup all purpose flour
1/2 tsp baking soda
1/8 cup vegetable oil
1/4 cup peanut butter (do not use peanut butter with Xylitol (also called birch sugar) as it's dangerous to dogs)
1/2 cup applesauce, plain+unsweetened
1/2 pumpkin puree (make sure it's plain and not a mix)
1 egg
1/4 cup cheddar cheese (you don't have to add this, but they're a sucker for cheese)
Blueberries are optional as well. But it's another thing they love.
Icing:
1/2 cup greek yogurt
1/4 cup peanut butter
Preheat oven to 370
Mix flour and baking soda together in a bowl
In another bowl mix the wet cake ingredients together, except for the egg and cheese. I used a stand mixer and mixed for a few minutes. Scraping down the sides to make sure it's getting properly mixed. Add the egg and mix for another minute or two and add the cheese in after that.
After that fold in the dry ingredients a 1/3 at a time and mix just until they're all combined.
I just put a little flour in the bottom and sides of a 8 inch cake pan. It stuck and good bit and I had to work to get it out. So, either use a little butter first and put some flour on or just some parchment paper to help with removing it. Once the batter is in the pans, make it as even as you can. The tops of mine ended up being a little lumpy.
Should take about 25 minutes to bake. Put a toothpick in and if it comes out mostly dry, it's done. Make sure it's completely cooled before removing it from the pan.
To make the icing, simply mix the two ingredients together. Again, I used a stand mixer and let it mix for several minutes to make it a little more fluffy.
After all of that, it's time to assemble. If you made a double layer cake like I did, make sure the "ugly" sides are facing inwards. Spread the icing evenly on top of one of them and place the other cake on top of that. Use the rest of the icing however you want, I did the same thing and spread it all over evenly. Then I just put the blueberries on top. Make sure to cover and put into the fridge whatever you don't end up using. I didn't have any, but like I said, you can always have some of it yourself.
