A lot of beginner cooks make the mistakes of holding your knife unsafely and always cooking on high. First, hold your sharpened knife like you're about to swipe your card at the reader. This allows you to control the angle of the cut.
Second, the hand holding the ingredient should be like a catgirl's paw, the tips of your fingers are curled. Keep the flat of the knife against one knuckle, so you always know where it is, even if your eyes aren't on it.
Third, medium-high is hot enough, until you get a better idea of how your stovetop/whatever handles which pots/pans. A castiron skillet is not going to cook the same way as a wok.
Fourth, cook meats and fiberous ingredients first, then other ingredients by order of how cooked they need to be. Cook one thing at a time, multi-tasking is a lie.
Lastly, wash your hands after you touch raw meat and then need to touch something else, no exceptions. Commit a food sin, and you will shortly be praying and making offerings at the Porcelain Temple.
