Wanted to share how beautiful the soup came out yesterday. I've become incredibly attached to making bone broth from rotisserie chicken. Always feels good to use everything. Even better they stopped using the type 5 plastic containers, so I'm using even less plastic! Woohoo! *happy dance*
This recipe is something I picked up and added to over the years. Yellow mustard powder is what REALLY made my chicken soup game grow. Never experimented with it in youth, obsessed now!!!
I recommend this method if you are hitting on hard times: this $5 chicken made four different meals before even making this soup. Chicken the first day, chicken sandwiches two more days, chicken quesadillas, and now this soup.
Basic instructions!
Pick your chicken, put meat in a bowl, anything inedible in the pot, break the bones with some broad nose pliers to expose the marrow (or tenderizer if you prefer), toss it in a pot with water and your preferred seasonings and simmer for five+ hours (I recommend a slow cooker if you need to work a shift), strain, saute preferred vegetables (or toss in to simmer another two to three hours if you have the time), add chicken bits and serve. <3
Seasonings I used:
Yellow mustard powder
Smoked paprika
Celery salt, onion salt, sea salt
Garlic powder (I can't eat whole garlic anymore, but I recommend it if you can)
Onion powder (Same)
Italian seasoning
Worcestershire sauce
Liquid amino acids
Vegetables used
Celery
Mushrooms
Broccoli
Zucchini
(Carrots are usually used in my chicken soup, but I chose not to this time.)
This method has saved our asses a FEW different times when hitting hard times. I hope it can help anyone who views it too! Stay tuned for my "Millennial star dumplings". I LOVE making depression era foods that are simply "too cute to be depressing". (If you do not get this joke: I recommend laughing anyway.)

From Chris: Of course, you want to make the stock first with the bones and TAKE YOUR TIME. The longer you cook it, the deeper the flavors will be from the chicken bones. Then get a large strainer, pour the stock in a separate bowl and either throw the bones away or compost them.
Then cook the rest and you're all set!
