A wonderful accompanyment for so many meats not just pork. It's also yummy on its own for those times that you need something light to keep up good health from the kitchens of

I have two versions of this; I use a Vitamix to make my sauce so I have a 'by hand' version and a 'Vitamix version'. I like this, it's great in the summer for a cool treat or if you're sick (like me right now) and don't feel like eating.
Ingredients
4 apples - cored and chopped.
3/4 cup water
1/4 cup white sugar**
1/4 teaspoon ground cinnamon (or 1/2 if you like cinnamon)
By hand:
Peel your apples before coring/chopping. Combine all ingredients in a saucepan in medium heat for 20-25 minutes or until apples are soft. Mash with a fork or a potato masher. If you like chunkier applesauce, drain about half of the left-over water.
Chill and enjoy :)
With a Vitamix:
No need to peel the apples, if you use one you know that you can put peels in it an it still comes out smooth. Combine all ingredients in a saucepan on medium heat for 10-15 minutes or until apples are a little soft. Drain most left over water (I leave a tablespoon or so?) and pop that in your machine on 5- 6 until apples are pureed. If you like smooth applesauce, turn it up on high for 5-10 seconds to smooth it up. Chill and enjoy :)
**Sugar depends on your apple. I'm using Granny Smith because I only like green apples, If you're using gala, sonya etc., adjust your sugar to about half! They're way sweeter than greens. x)
