 
                
                    These are popping up all over the internet usually in Smoker circles  so here is an oven baked version
Its not a new technique but its just seems to creep up. and with as cheap as drums are its a good cut
Oven Baked Chicken Lollipops
Ingredients
6-8 Chicken Drumsticks
1/4 c Olive Oil
2 tbs Chicken Bullion
1 tsp Paprika
1 tsp Garlic Powder
1 tsp Onion Powder
Salt and Pepper to taste
Glaze
1/2 cup BBQ Sauce (I used sweet baby rays burbon)
1/4 cup hot suace (I used a tabanero peach burbon)
1/4 cup honey
Instructions
preheat the oven to 375
First, using a sharp knife, cut around the “handle”’of the drumstick through the skin and tenderloin.
Now push the meat down towards the bottom of the drumstick to create a lollipop shape. You can use the knife or your hands. Just be careful not to hit into any sharp bones if using your hands.
Then, grip the skin that’s left on the tip of the bone with paper towel and pull it off the top.
Once the drumsticks are all trimmed (this will be a labor of love but it will be worth it!) place them in a large bowl.
Now, add the olive oil, paprika, chicken bullion, garlic powder, salt and pepper. Please keep in mind when adding salt that the chicken bullion contains salt.
Then, massage the oil and seasoning into the meat until it’s nice and evenly coated.
Next, place the chicken lollipops into the center of each muffin tin hole or place them (standing upright) onto a parchment paper lined baking sheet. Bake them for 40 minutes at 375
In the meantime, mix together the BBQ sauce, hot sauce and honey.
Then, once the chicken is done, glaze each drumstick in the sauce by either brushing it on the meat or dunking it in.
Now place them either back into the muffin tin holes or onto a parchment paper lined baking sheet.
Finally, pop them in the oven for another 10 minutes. Serve warm and enjoy!
for a side I made buffalo style velveta mac and cheese and added a little extra milk with as dusting of ranch dressing powder for a unique flavor
This all came out really well the bone handle on the drum makes for a much cleaner finger food. The fox really like this and ate 4 legs with dinner it was a nice meal
