This is a turkish egg dosh that can be eaten at any daytime imo.
Its called Cilbir and is super easy yet delicious and contains of 3 parts:
On the bottoms of the dish is yoghurt containing of:
- pure yoghurt
- garlic (I take at least 1 clove per 100gr yoghurt)
- white pepper
- salt
Spice it to taste and let it sit until you do the rest
Done!
Poach your eggs:
- bring a big pot of water to a boil
- salt the water and put in some white vinegar
- swirl the water until you see a vortex
- crack open your egg carefully into the middle of the vortex
- boil the egg to wished hardness
- repeat with as many eggs as you want to eat
- done!
Paprika butter!:
- melt butter in a pan
- add some cumin and a good amound of powdered sweet paprika
- roast only for a few seconds so your spices dont burn and turn bitter!
- done!
Assemble!
- on the bottom of the dish place your garlic yoghurt
- drizzle with some olive oil
Put your poached eggs on top of the yoghurt
- drizzle the paprika butter on top of the eggs
Done! Enjoy!
I immediately fell in love with this dish, spices, creamy eggs, garlicy yoghurt and crunchy toast, what is there not to love?
Tipp: Roast some toast in the remaining paprika butter, delicious! ;)
