1.5 lbs leeks, rinsed and cut into 1-inch sections

.333 cup plain yogurt
3 ounces parmesan cheese, grated
1 ounce bread crumbs

1. Preheat oven to 350F. Butter a shallow ovenproof dish.
2. Place the leeks into a saucepan of water and bring to a boil. Simmer for 6-8 minutes. Drain well and then place into the prepared dish.
3. Beat eggs with goat cheese, yogurt, and half the parmesan and season with salt and pepper.
4. Pour the cheese mix over the leeks. Mix bread crumbs and remaining parmesan cheese together and sprinkle over sauce. Bake in oven for 35-40 minutes until the top is golden brown.
