2 lbs potatoes
8 ounces kale, shredded
2 green onions, chopped

3 ounces aged cheese, grated
1. Boil the potatoes until tender, then mash.
2. Boil the kale until tender but still crisp. Preheat oven to 375F.
3. Drain kale and mix with potatoes. Add onions, butter, salt, pepper, and nutmeg.
4. Spoon mix into ovenproof dish. Make four depressions in the mix, then crack an egg into each.
5. Bake for about 15 minutes until the eggs are set, then sprinkle them with cheese.
