Ingredients
* 1 prepared pie crust, ready for baking
* 4 medium sweet potatoes
* 1-2 habaneros (chocolate variant preferred)
* 1/2 cup butter, softened
* 1/2 cup sugar
* 1/2 cup brown sugar
* 2 eggs
* 1 tsp vanilla extract
* 1/2 tsp cinnamon
* 1/4 tsp nutmeg
* 1/4 tsp ginger
* 1/2 tsp salt
* 1/2 tsp lemon juice
* 3/4 cup evaporated milk
* 1 bag mini marshmallows
Directions
1. Peel and cube the sweet potatoes into small, consistent chunks and put in a saucepan.
2. Halve the habaneros and remove most of the seeds, then add to the sweet potatoes.
3. Cover with water and add a large pinch of salt, then bring to a boil and simmer for 30 minutes, until the potatoes are soft and mashable.
4. Strain the potatoes and remove the habanero (or don't), and mash together.
5. Preheat the oven to 425 °F
6. In a large bowl, cream together 1/2 cup butter (softened), 1/2 cup sugar, and 1/2 cup brown sugar until smooth.
7. Add 2 eggs and mix until combined, then add 1 tsp vanilla extract, 1/2 tsp cinnamon, 1/4 tsp nutmeg, 1/4 tsp ginger, and 1/2 tsp salt.
8. Add the mashed sweet potatoes, 1/2 tsp lemon juice, and 3/4 c evaporated milk, and beat until smooth.
9. Pour the mixture into a prepared pie crust and bake on the bottom rack for 15 minutes, then reduce heat to 350°F and bake for 50 more minutes, until the middle is set but still slightly wobbly.
10. Before serving, top with 1 bag mini marshmallows and bake or broil for 10 minutes, until the marshmallows start to brown.
Notes
* You can leave out the habanero if you really want, but you should really try it at least once.
* If you aren't going to serve the whole pie at once, only melt marshmallows onto slices as you eat them, as the marshmallow gets less good as it sits.
In Appreciation
This recipe was originally shared by JambalayaThePit. Back in 2017 she posted a journal, a poem about anxiety, which resonated with me so strongly that I posted my first comment in the furry community. I remember taking over half an hour to compose a small, simple comment; my chest on fire, heart pounding in my ears, hands shaking, as I finally pushed through my social anxiety. That day was my first step in a better life direction. It’s entirely possible that without her sharing such a personal part of herself that I wouldn’t be here today.
She has since left our community, but the impact she had on me will last a lifetime, and I want to express my heartfelt gratitude for the time she was here. Wherever you are out there, I hope you’re living your best life, because you gave me the first push to living mine. Thank you.
