From the Pangolin family to yours!

Well, when you have leftovers, there's other ways to reuse them... such as soup! (Although personally, I was hoping to make a curry with them, but as usual, plans of mice and pangolins often go awry)
SO:
Ingredients:
Enough leftover turkey meat to make a soup (had at least two cups plus)
1 can fire roasted chopped tomatoes
2-3 sticks of celery
1 cup of pygmy dicks...er...baby carrots, chopped
1 teaspoon garlic salt
1 chopped onion
1 teaspoon onion powder
1-2 boxes chicken stock
1 bag pre-made tortellinis (really should have used 1/2 bag, but my step loves to cook in bulk *groans*)
1-2 teaspoons olive oil to coast your soup pan
1 big soup pot / stock pot plus stovetop of your choice (its a one pot meal)
~ Sauté the onions, celery and carrots until tender
~ Add in your can of fire roasted tomatoes (you can use spicy or not)
~ Add in your box of chicken stock and turkey meat to boil
~ then add in the tortellinis
....As you can see, this will more than likely need more stock, since pretty much any kind of pasta loves to suck. *coughs*
That out of the way however, this is quite good and will at least feed more than 4 people at the table!

~ Great with a shake of parmesan cheese on top, and the fire roasted tomatoes really give the soup the "oomph" that it needs !
