
I am trying to eat better and lose weight. Something that when living at home I seemed unmotivated to do.
Now I am on my own, and wish to share with you, a recipe of a salad I made.
What you will need is the following:
Green Leaf Lettuce (Actual name, none of that iceberg lettuce mostly watter with minimal nutricion value stuff)
Spinach (Stem parts can be trimmed off, or trimmed & added to salad or left out, your choice)
Purple Lettuce/Cabbage
Here, in this variation, I have added Strawberries.
The chicken stuff will be at the end.

Wash all the veggies first.
Take your lettuce, spinach and purple lettuce/cabbage and cut it into small peices. I trim it so that the ultra thick and crunchy dense stuff is minimal due to my not likeing certain textures of foods).
Mix it up a bit.
Take strawberries & cut the green off of it (Unsure if it is okay to eat the green, but for the sake of this, trim it off.). Take strawberries and slice in half, then those halves in half. Mix around.
NOTE: One can replace strawberries with Apples as well. It also works well I have noticed.

Onto the chicken.
I took some of those frozen boneless chicken breasts you can buy in a bag and cooked one in the microwave. Use your judement to make sure chicken is cooked properly. Usually one chicken breast is enough, but sometimes, slicing it in half so it looks like two chicken pattties can work also (especially if on a budget like me).
Once the chicken is done cooking, take your fave spices and blend of spices & slather it onto the chicken.
I myself made a mix consisting of equal parts of that "Chef's Essense" stuff you can get at the 99 cent store (Goes good on anything it seems I might add). Cayenne pepper powder, sald & pepper, Onion & Herb & garlic & Herb spice stuff. Once in a container , shake it up to mix it all around. You won't be disappointed by the flavor. ^o~
Once the chicken is coated in your spices on both sides, cut chicken into small chunks & add to salad.
I personally suggest using a think of yogurt for dressing, preferably perhaps one of those nonfat or low fat flavored ones. It is probably healthier for you then lots of these dressings people drench their salad into.
I have found that Raspberry and blueberry can work well in this salad, though there are many yogurt flavors that I am sure will work well.
Hopefully others will try this recipe out and let me know their experiances. ^_^

That looks delicious. :9 Personally I don't bother to cook anything with more than a few ingredients if it's for myself. Also, I don't know about you, but I've been on the Atkin's diet and it's pretty much the end all for me. I lost 20 lbs. in a day or two less than two weeks. It's also pretty lax in that you eat pretty much exclusively meat and veggies. You can have a little bit of regular fatty dressing and a bit of cheese and bread if you want, but you'll lose weight. At least I think you will. I don't know about your metabolism but I'm six feet tall and went from 290 to 267 in that period. Unfortunately I'm unemployed now so I can't afford to eat healthy until I get another job. Good luck on losing weight!
