Blocking and parrying sharp swords with unarmoured wings may appear highly impractical at first glance, but there is an in-lore explanation as to how that's possible in this setting. The wings are enhanced with earth elemental magic to make them tougher than a dragons scales are known to be. Why not do this all the time? It requires concentration to hold that, be it for blocking or parrying. Pure and simple.
