
Recipe - Ryuuki's Special no.5 ~ Spicy Catfish
I whipped this up today for lunch and was so pleasantly surprised by the taste that I wanted to share my recipe! :D

Ryuuki's Special no.5
Spicy Catfish Fillet with Vegetable Garnish
Ingredients:
1 catfish fillet or fish fillet of choice (fresh or frozen; frozen fish must be thawed prior to prep)
2 tsp of olive oil
1 1/2 tbsp of cajun blackening seasoning
1 tsp of garlic powder, granulated
1/2 tsp of black pepper
1/2 tsp of Lawry's seasoning salt
1 red bell pepper slice
1 leaf of green leaf or romane lettuce
Sriracha Chili Garlic Sauce
Utensils and supplies needed:
Fork
Paring knife
Spatula
Non-stick foil
Potholders or ovenmits
Methods of Cooking:
Option #1 - Grilling on a George Foreman machine
Option #2 - Oven baking
Preperation:
First, take your non-stick foil and pull a piece that will be big enough to make into a pouch for your fish. Taking a tsp of olive oil, pour it directly in the center of your foil and lightly spread it around with your fingers. Make sure to cover a large enough area so your fish won't stick. After you've coated your foil, its time for the fish.
Rinse your fish under cool water and let the excess drip into the drain, then place your fish on the olive oiled area of the foil. Now its time for your seasonings!
The first thing you want to use is the cajun blackening seasoning. Put on the 1 1/2 tbsp of cajun on and rub it across the surface of the fish gently, don't grind it in. Then follow up with your garlic powder, black pepper, and seasoning salt. If you feel you need more spice, add in more.
After seasoning the fish, take your second tsp of olive oil and drizzle it over the top of the fish. This will keep the fish from sticking to the topside of your foil pouch. Now seasoned and oiled, fold one side of the foil over the fish and then the other. Make sure to fold your ends closed and then roll them until they meet the end of your fish.
Now you're ready to cook it!
Cooking - Option #1: Grilling on the George Foreman
Take your foil pouch with fish inside and place it on your Foreman grill. Close the lid and cook from 20 to 30 minutes, cook time will vary depending on the thickness of your fish fillet so don't be afraid to open your pouch and check on it. Once done, remove the pouch carefully with ovenmits or potholders and place the fillet on your plate. Garnish with your lettuce leaf, bell pepper, and sriracha sauce and you're done!
Cooking - Option #2: Oven baking
Preheat your oven to 400 degrees, then place your foil pouch inside. Bake at 400 for 20 to 25 minutes, cook time will vary depending on the thickness of your fish fillet so don't be afraid to open your pouch and check on it. Once done, remove the pouch carefully with ovenmits or potholders and place the fillet on your plate. Garnish with your lettuce leaf, bell pepper, and sriracha sauce and you're done!
