Gon Kobold's cookings;
Lemon Cake with strawberry
100g butter
1 dl sugar
2 eggs
2 dl wheat flour
1 teaspoons baking powder / sodium carbonate
1 lemon
butter + breadcrumbs
4 big spoons strawberry jam
Kooking instructions:
Combine melted butter with sugar into a foaming mix.
Add egg(s) and mix well - after this add grated lemon skin.
Combine flour and baking powder in separate bowl together.
Add the sugar-egg-mix into this + squeezed lemon juice
Blend allt together until solid dough by hand, wooden spoon or other mixer tool
Have a baking tray; ceramic, muffin cups or alumin foil
Butter up the edges with melted butter/oil that you cover using breadcrumbs or similar fine edible power mix.
Depending on the size, if you make cake or muffins;
I used inch thick base of cake dough bottom of tray, added few islands of spoonfull of jam which I covered with flattened blanket of cake dough
- so 1/2 of cake dough to bottom, jam filling middle/fill hole, 1/2 of dough to top
Warm up and baked 40-45 mins with 160 C at air frier or oven.
Use toothpick to check that cake is solid.
Presto! You have yourself a lemony cake with strawberry jam

Wanted to add little something on the baking instruction:
160 C is 320 F, but it can be little hotter tempeture as 180C or 356F
With original heat the bottom layer might be spongier
- so toothpick check all the way from the bottom layers!
