
Well, maybe this is one way to get my mind away.
Made some pork belly burnt ends today. Cooked on a Traeger for 3 hours at 275, spritzed with a mix of apple juice and Jim Beam apple bourbon every 45 minutes (I need to get it out of the house somehow without drinking it). Then panned them up, threw in a few tablespoons of butter and some more dry rub along with a probably unhealthy amount of Traeger Reserve Sweet Apple barbecue sauce and cooked them for another 30 minutes covered with aluminum foil and uncovered for the last 15.
Ultimately made 10 pounds of meat today, and I don't know what to do with it. Smoking meat isn't going to help me recover, since a lot of the time is spent waiting and monitoring, but it's a start!
