This curry has rich mango flavor with nice warmth. It's one of my favorite dishes to make and great for a cold day.

Ingredients
~45-55 oz of coconut milk (about 4 cans or the size of most large bottles)
2-3 large chicken breasts
3 green mangos (note: very important that these are not yet ripe!)
1 large onion
1 large head of broccoli
4-5 green onions
2 cans tomato paste
1/3 cup vegetable oil
1 tablespoon black pepper
Your favorite yellow curry powder, or a combination of the following to taste:
- Tumeric
- Cayenne pepper
- Smoked paprika
- Cumin
- Orange peel
- Fresh garlic or Garlic powder
- Salt
Serve with white rice

Recipe
1. Add vegetable oil to large flat pan and heat under medium heat.
2. Slice onion into large pieces and add to pan.
3. Slice broccoli stalk into discs and add to pan. Add black pepper and stir.
4. Cube chicken and add to pan. Stir.
5. Slice broccoli tops and add to pan. Stir.
6. Peel mango and cube, then add to pan. Stir.
7. Add remaining spices to pan. Stir.
8. When chicken is nearly done and browned on all sides, add coconut milk and tomato paste. Set pan to low heat and stir.
9. Let simmer for 25-30 minutes. Serve with rice and top with green onion.
