A great tribute to the late

This recipe I bring is inspired, and in honor of, the late great
. I hope he would be proud of this dish and love it as much as my family does trying it. And I hope that his NEERest and dearest enjoy this and find comfort in these hard times. It celebrates Tacos, Bacon, and like Neer, a 12 (on the cheese count. Neer is a 12/10 to us.)Thank you for everything, Dragoneer. May the furry fandom live on forever more.
You will need:
2 Boxes Macaroni and Cheese
1 lb. Ground Turkey (99% lean is best. You will see why.)
1 Package Thick BACON
1/2 Yellow Onion
1 Stick Salted Butter
1/2 Cup 2% Milk
1 Package Shredded Italian Blend Cheese (Mozzarella, Provolone, Parmesan, Asiago, Fontana, Romano) - 8 oz.
1 Package Mexican Blend Cheese (Monterey Jack, Cheddar, Asadero, Queso Quesadilla) - 8 oz.
1 Pack Gorgonzola Cheese - 5 oz.
1 Bottle Cholula Chipotle Hot Sauce
1/2 Cup White Wine (I used Pinot Grigio)
2 Tbsp. Yellow Mustard
Garlic Powder
Onion Powder
Chili Powder
Paprika
Ground Cumin
Oregano
Fresh Ground Pepper
Cilantro
-If the laundry list of groceries didnt scare you off, let’s begin.-
1. Begin by finely dicing your 1/2 Yellow Onion. Once it is diced, place the onion in a bowl for later.
2. In another bowl, pour and mix your cheeses in and mix. Add half a bottle of Cholula Chipotle Hot Sauce, 4 Tbsp. Garlic Powder, 1 Tbsp. Onion Powder, 2 Dashes Cumin, 1 1/2 Tbsp. Oregano, Chili Powder to taste, 1 Tsp. Paprika, 4 Dashes Ground Black Pepper into the cheese and mix. At this time, mix in about 1/4 of the White Wine into the cheese mix. Let the mixture marinade out while we move on to the next step.
3. In a large skillet, fry the package of Bacon until it is nice and crispy. Do NOT throw out that grease!!! Once all the bacon has been fried, on a medium heat add your diced Yellow Onion to the bacon grease. Keep turning them until they begin to brown. It may be hard to tell due to the bacon grease but it will be worth it to make them extra special.
4. Once the Onions have been browned, add your package of Ground Turkey to the mix. Add 1 Tbsp. Garlic Powder, 1 1/2 Tsp. Onion Powder, Chili Powder, 2 Dashes Cumin, 1 Tsp. Paprika, and 1 Tsp. Ground Pepper to the Turkey. These are the same spices that you used in the cheese mixture. They will blend magically together when the time comes. Then, add the second 1/2 of the Cholula Chipotle Hot Sauce to the Turkey mix. Keep cooking until the turkey becomes a uniform color. Mix in your remaining 1/4 Cup White Wine and continue to cook on a medium heat for about 3-5 min.
5. Cook your macaroni using the usual method (adding salt to your water and cooking for about 8 min, saving back about 1/2 Cup of the Pasta Water and adding it to your cheese mixture). When the Macaroni is drained, add your Milk, Butter, and the Cheese Mixture to your Macaroni. Add your 2 Tbsp. Yellow Mustard and begin mixing.
6. All that delicious bacon? It is now time to crumble it into the Mac and Cheese concoction. EVERY PIECE OF BACON! NO CHEATING!! I KNOW THE TEMPTATION IS THERE BUT RESIST!! Now that all is said and done, mix the Turkey and Onion mix into the Macaroni and Cheese. Mix until uniform and continue to cook on a medium low heat for about 2-3 min.
7. Time to plate! This mix is delicious on its own. But in a Taco? EVEN BETTER!!! Add this to your Taco Shells (I fried my Corn Tortillas in Corn Oil on a medium high heat for about 30 second each side, then let them drain on paper towel). Add fresh Cilantro to garnish (Or for those of you who think it tastes like soap, use another vegetable. Lettuce is acceptable.)
