NOTE: Not all the ingredients I used were Kosher of Passover, but did my best to adhere to its laws
Ingredients:
Crust -
1lbs matzos, broken up
3 eggs
1/2 cup oil
Salt, pepper, (I also added Italian blend seasonings)
Toppings -
Marinara or Pizza sauce (the book has the recipe to make the sauce homemade)
Shredded mozzarella & provolone
Grated Parmesan cheese
Stuffed olives & feta cheese mix, chopped (from a grocery olive bar)
Variations include mushrooms, anchovies & tuna (fish is Pareve, which can be served with either meat or dairy)
Instructions -
1. Soak matzos in warm water for 10 min, then drain & squeeze out excess water
2. In a large bowl, mix matzos, eggs, oil, salt, pepper, & Italian seasonings
3. Press matzos mixture onto a greased cookie sheet (we made enough to make two medium-sized pizzas). There's no active gluten, so the mixture will not act like actual pizza dough
4. Bake at 350*F for 30 min
5. Once crusts are removed from oven, top with sauce, mozzarella & provolone cheese, olive/cheese mix, & grated Parmesan cheese
6. Put back in oven & bake for further 15 min
