This is what I had for Easter brunch today. Yes, that is ketchup in that ramekin; don't you dare judge me.
WHAT YOU NEED!
4 eggs
1/4 cup (100g) leaf spinach
1/4 cup ham cubes
4 oz. goat cheese
sea salt to taste
black pepper to taste
8 tbsp cream
WHAT YOU DO WITH WHAT YOU NEED!
1. Butter 4 10-ounce ramekins and place in a roasting pan. Preheat your oven to 350F (176C).
2. Saute the spinach in butter until wilted; season with sea salt and pepper and divide between the ramekins.
3. Cut up or crumble the cheese and divide between the ramekins; do the same with the ham cubes.
4. Crack an egg into each ramekin; pour 2 tbsps cream over each and season with sea salt and pepper.
5. Add boiling water to the roasting pan to reach halfway up the ramekins.*
6. Bake for 15 minutes or so, until the eggs are set but the yolks are still runny.
7. Serve with toast.
The brunch serving you see in the picture includes the shirred egg accompanied by sourdough toast points and sections of cara cara navel orange. I ate brunch with a Morning Martini (recipe to follow).
Verdict: Oh YASS! Very hearty and tasty; the ketchup wasn't required. I need the spoon to scoop up the remainder, and it was all very good. Grade: A+
