For my omnivore friends:
Use olive oil and rub spinach or other leafy greens down after seasoning them up with any prefferer blend. Place them at the bottom of a bakedish. Sometimes I'll add bell peppers.
Put your desired seasoned meat on top and cook it in the oven. Usually I do salmon, and the end goal is to make the spinach cook down and absorb the flavor of the meat on top of it, extending the flavor profile further for the meal. This way, you don't break the bank on excess meat!
