3 lb boneless leg of lamb, butterflied a bit as you see and at room temperature
Sea salt and ground black pepper
Olive oil
WHAT YOU DO WITH WHAT YOU NEED!
1. Get your gas grill preheated, then dial it down to medium.
2. Anoint the lamb with oil, season with salt and pepper.
3. Sear it for 10 minutes each side, then let it cook an additional 20 minutes, flipping it occasionally.
4. Let it rest 10 minutes before taking the blade to it.
Verdict: delicious. Grade: A+
