Ingredients
3 to 4 large potatoes peeled and diced
1/2 to 1 cup diced large sweet onion
Mild pickled jalapenos or spicy
2 tsp butter
Paprika
Oregano
Blackpepper
Onion powder
Garlic and herb seasoning
Cholula hot sauce original
Farm fresh pepper jack cheese
6 Italian cheese blend shredded
Mild cheddar shredded
Pam
Step 1
Preheat oven to 425°
Step 2 wash your potatoes in the sink than grab a cutting board. Peel or slice the skin off of your potatoes than slice the potatoes into your desired width. Take those slices and cut into nine pieces for each slice than place in a bowl.
Step 3
Take your sweet onion and do the same as you did with the potatoes above.
Step 4
Grab a cup of pickled jalapenos that are pre sliced take them and cut each slice into 4 and place into the bowl with the potatoes and onions.
Step 5
Grab an oven safe dish spray it with pam. Then dump your potatoes, onions and jalapenos into the dish. Then add 1 tsp to 1 1/2 tsp of all the seasonings listed above (oregano, paprika, black pepper, onion powder, garlic and herbs) once your seasonings are added mix everything thoroughly.
Step6
Spray the top of the veggies with pam than place the butter in three spots of the baking pan. Then place dish into the oven for 45 to 50 minutes.
Step 7
After 20 minutes pull the dish out and stir and mix everything thoroughly.
Step 8
After everything is cooked pull out of the oven place 5 to 6 slices of pepper jack cheese, shredded 6 Italian cheese, and mild shredded cheddar cheese. Add some hot sauce on top the cheese than place back into the oven for 2 minutes. Then pull out of the oven let them cool before serving.

* From Chris: The reason I say that this dish has a lot of possibilities is that, for all purposes, this is a traybake. And AS such, you can make spaces in between the potatoes and cook your eggs along with them; roast chicken, pork loin, ribs or lamb chops on them; add veggies such as Brussel sprouts, portabellas or pumpkin/butternut squash with them, etc etc etc!!!!

To your point, Chris, you're so right. On it's own, this looks like a lovely side dish. But as a "one pan solution", you have the basis of a whole meal here with the inclusion of some proteins, letting their juices infuse and add to the 'taters. And a very tasty meal it will be!
