This is a dish I made using quinoa (KEEN-wah) as the grain. This grain is widely used in South America but hasn't until recently found much use in the United States.
junowolf posted a picture of a dish he created for his culinary edumacation using white quinoa (it comes in white, red, and black at my store) and I had been reading about it and he suggested I give it a try, so I did. It does not have a very strong flavor and has a soft but crunchy texture that lends some mouth interest to the dish. I made mine with boiled sausage, white mushrooms, and black olives. The only other seasoning agent I used was some soy sauce. One of the only bad things I can say about it is that the small grains have a tendency to get stuck in the mouth and you may find them later, thinking they are a bit of dust that you spit out. Nope, it's just some little quinoa grains.
As for quinoa itself, it is one of the only plant-based complete proteins available; complete as it contains all the essential amino acids. Vegetarians and vegans can eat quinoa as a source of protein (yes, even meat-eaters can eat it as a source of protein without melting).

I suggest a black and tan: Black quinoa with pork. Maybe some mushrooms (I loves me some mushrooms in mah food). If you use a vinegar-based marinade for the pork it won't alter the color too much.
