
So here what shakshuka can look like. I put Tillamook white cheddar on top, since I had a LOT of clearance goods from the store waiting to be used. This was for meal prepping for my busy work schedule last week. Shakshuka is Arabic for tomato eggs or stirred eggs. Think of it as chili stew, but without beans, swap with eggs for your protein source. I have made it with feta cheese before and found it delicious. I stick to a basic vegetable base for mine. This time, I used two tomatoes, the type one might use for a grill party, one zucchini, mushrooms, onions, two or three cloves of garlic, herbs and spices. Since it is low carbohydrate, I mix up my choice of carbs. Either breads, couscous, quinoa, or rice will do.
