Simply satisfying and a beautiful bake for one or many from the kitchens of

This was SO GOOD. It's actually possible to make better (I'll leave suggestions at the end) but I was working with what I had in the house. XD This recipe pretty much poaches the fish so if you prefer your fish drier this isn't for you.

Ingredients
~2lb fresh Haddock
1 can diced tomatoes
1/2 C tomato sauce (with a few tbs extra)
9 thin pats of butter
1 clove garlic (crushed)
fresh chives (chopped)
fresh basil (torn)
1 awesome zucchini (sliced) http://www.furaffinity.net/view/6124804/
mozzarella
a splash of white wine
Instructions
1. Preheat oven 350°
2. Drain diced tomatoes but keep liquid aside
3. Line a baking pan with tinfoil, spread out the diced tomatoes along the bottom.
4. Place the haddock on top of the tomatoes, place 8 pats of butter over haddock.
5. In a frying pan, saute garlic with one pat of butter. *
6. Add tomato liquid, sauce, basil, chives, and the white wine and just simmer for 1-2 minutes (do not boil or overheat)
7. Pour sauce over haddock, cover with zucchini slices and add the extra tbs of tomato sauce over the top.
8. Bake 20 min (uncovered)
9. Take out, cover with mozzarella ** and bake an additional 10 minutes.
10. FOODGASM.
This is more than enough for 3 people. ¦D No sides necessary.
* also add shallots or onions here if you prefer
** obviously I was stuck with a Sargento mix here, you should use fresh mozzarella or a nice parmesan. Cheap cheese aside here, it was still really, really, really good. XD
