They've had it too good for too long
Recipe (makes 700-800ml)
2 Cans (800g) of Chopped Tomatoes
1 Small Onion, finely diced
1 Medium Carrot, grated
1/2 Bulb of Garlic, minced
3tbsp Oil (used Rapeseed)
1/4 Cup of Soft Brown Sugar
1tbsp Tomato Puree
1tsp Paprika (Smoked or Unsmoked is fine)
1tsp Ground Ginger
1tsp Ground Cumin
1tsp Cinnamon
A small amount of Malt Vinegar
Salt and Pepper to taste
1. Start by putting a medium/large pan (at least 1L capacity) on medium heat and warm up your Oil. Add the Onion and Carrot and lightly cook for about ten minutes before adding the Garlic, Spices and Tomato Puree. Cook for another couple of minutes until all the spices are fragrant, then add a glug of Malt Vinegar to deglaze and lift anything stuck to the bottom of the pan.
2. Mix in the Chopped Tomatoes and bring the pan to a very low simmer. Let it cook for about half an hour before stirring in the Sugar, then simmer for another half hour.
3. Once an hour has passed, remove the pan from the heat and let it cool for 10-15 minutes before blending. You may need to let it cool further if you are using a stand blender instead of a handheld blender. Blend the sauce until very smooth and add Salt and Pepper to taste. Cover it back up and let it cool down to room temperature.
4. For extra smoothness, press the sauce through a fine mesh sieve before transferring to jars, sauce bottles etc. and chilling.
