Had husky butt's extended family here tonight and made them a 5 course meal. This was the main, a garlic and rosemary crusted rack of lamb with sweet pea risotto.
Menu:
Watermelon Gazpacho
Grilled Caesar salad
Garlic crusted rack of lamb
Lavender gelato with blueberry yogurt coulis
Assorted cheese platter
And yes I broke down the rack myself :P
Recipe:
2 racks of lamb
A mega butt ton of garlic (at least 1 head)
1/2 cup rosemary
1/4 cup olive oil
s/p
French the rack and cover the bone ends with tin foil.
In a food processor, combine the garlic, rosemary and oil, process until nearly minced.
Salt and pepper the lamb before rubbing on the garlic oil, seasoning first will ensure the meat gets salt penetration and not just crust.
Roast the lamb at 450 for 15 min, then turn and roast another 10 min for approx. medium-rare.

Nah not really. Ferran Adria (pretty much the world's best chef) never went to school and started as a dish washer.
A guy I work with wasn't classically trained and only has one year's experience but Universal is pulling him to be a company chef. You just have to have a passion for food and high standards.
