Hayashi Rice (recipe)

Always wanted to try Hayashi rice, but making the roux from scratch takes too damn long for a weeknight dinner.
So I finally broke down and just used the box mix, lol.
Very delicious! Like Japanese curry, but with a tangy kick! Recipe below:
HAYASHI RICE
Time: Around 1 hour
Makes: 4 servings
INGREDIENTS:
1/2 - 1 pound thinly sliced beef
1 small onion
1 (8 oz) box of brown button mushrooms
1/2 box of S&B Tasty Hiyashi Rice Mix
1 TBS oil
2 cups water
STEPS:
1) Slice beef into 1-inch pieces.
2) Slice onion into thin slices.
3) Chop mushrooms into quarters.
4) In a large pan or pot, add 1 TBS oil on medium high heat.
5) Add beef and cook until brown.
6) Using tongs, remove beef slices and set aside.
7) Add onions and cook until tender. (Add 1 more TBS oil if needed!)
8) Add mushrooms and cook until tender.
9) Add beef back into the pan.
10) Add 2 cups water and bring to a boil.
11) Lower heat to medium-low, cover, and simmer for 15 minutes.
12) Turn heat to low.
13) Add Hayashi sauce cubes to the pot.
14) Stir for 5 minutes, until pieces are melted.
Serve with rice! Enjoy!
