Wonderful perfect pretzels to nom on any time from the kitchens of

After a trip to the states and experiencing the wonder that is the American pretzel, rather than the little crunchy things we have here in the UK, I stole the recipe from an American friend and like the make them myself. Heres how to do it:
Ingredients:
* 1 sachet dried yeast
* 1 1/2 cups of lukewarm water
* 3/4 teaspoon of salt
* 1 1/2 teaspoon of sugar
* 4 cups of strong white flour
* 1 beaten egg mixed with a little water
* coarse salt (salt grinder)
Dissolve the yeast in the warm water in a large bowl. Add sugar and salt and mix til its all dissolved. Mix in the flour and knead until the dough is soft and smooth. Now divide the dough into smaller pieces (I find a ball of dough about the same size as a ping pong ball is about right. maybe a little smaller) and roll into ropes of dough. Form the ropes into pretzel shapes, place on a tray lined with baking paper then use a pastry brush to apply a glaze of the beaten egg, lastly grind coarse salt to taste onto the pretzels, stick them in the oven, bake for 10 minutes at 400F (approx 200C works fine for us Englandfolk!)

Lye is an alkaline substance used to cure the pretzel and makes it brown on the outside while it bakes.
However, it's very dangerous to handle since it's highly caustic and can cause nasty chemical burns. It also is poisonous if you swallow it so you need to be very careful when baking with it. Honestly, it's not worth the burns and/or death just to make it look like the commercial pretzels.
It doesn't affect the flavor any and I'm sure these taste just perfect without it! They sure look awesome! :D
