Pork Tenderloin
I love pork tenderloin, so I made my own recipe with my own pork gravy.
Preheat your oven to 350°F
At least 1 pound of pork tenderloin
Rosemary, minced garlic, salt, pepper, and 1/8 tsp of olive oil. Mix in a small bowl, creating a rub. I used a spoon to help spread this rub on my pork. Gently, place it in your preheated oven for about an hour (time may vary).
My mashed potato recipe
I use russets, they're better for mashed, add a little sea salt, and cook them until they're tender. Add a couple of tablespoons of butter and a splash of milk. I like mashing and whipping my potatoes.
For my pork gravy
I used the juices from my pork loin and poured out 1/4 of a cup. Of course, that wasn't really enough, and I added some beef broth (it turned out delicious still). Start by making a classic roux, mixing the flour and butter into a paste, slowly adding your pork juice and beef broth. Just until it's the thickness you wish. For spices, I used more rosemary, garlic powder, onion powder, salt, and pepper.
From Chris: This is a simple and brilliant recipe - and keep in mind that the mashed potatoes are more of a "blank slate" that you can do a lot with, such as adding in roasted garlic, powdered ranch dressing, pesto sauce, your favorite curry powder, and so on!
