Can't wait to see the rest of this one. The only thing I'd suggest is using more than beef in your meat-balls. Fat content and texture can benefit a lot from a mixture of pork and beef, or if you want to do it in the Italian grand-mother Sunday gravy way, even veal!

And carrots are a nice way of adding sugar to a sauce with the additional benefit of fiber and more vitamins. Chop them finely enough mirepoix style and they'll add just a hint of caramelized flavor, plus veggie goodness. :)

I do love me some carrots in Italian food!! Or fried eggplant~
