Ravishing raspberries for fabulous flavour and amazing colour from the kitchens of

A tasty dessert. My brain is dead, it's 1:45am and I just finished making this.
1 loaf bread (Aim for French, but day-old white works just as well)
3 1/2c heavy whipping cream
1c milk (whole, preferably)
1/2c sugar
1lb white chocolate chips
7 egg yolks
2 whole eggs
Raspberry Sauce:
1 pint raspberries
1 tsp lemon juice
1/4c sugar
1/4c water
1. Set the oven to 275 degrees. Cut the bread down into cubes and toast it off; don't put any color on it but do get it to that 'toasted' feeling.
2. Set up a double boiler on the stove. Add 3c cream, 1c milk and 1/2c sugar to it and stir until the sugar dissolves and the mixture is lukewarm. Remove it from the stove.
3.Slowly stir in about half the white chocolate until it's all melted in. In a separate bowl, whisk the eggs and yolks together; fold that into the cream mixture.
**** Don't sit too long at this step! That egg's heating up from the milk! If it cooks, you'll have to redo the step.
4. Grease an oven-safe pan or glass baking dish (Glass works better). Add a bit of the mixture, then add the bread. Add the remaining mixture until all the bread is soaked - swish it around if you have to so all of it gets absorbed in.
5. Cover with foil and pop that baby in the oven for 45 minutes. Remove the foil and put back in the oven until the top is golden brown.
6. Add the rest of the heavy cream into a double boiler and fold in the white chocolate chips until it makes a thick, tasty, white-chocolatey sauce; set aside.
7. Combine all the raspberry sauce ingredients into a small saucepot. Simmer until the raspberries break down and it turns into a sauce. Adjust the water or sugar if it's too thick or too thin - you want it to be the same consistency as the white chocolate sauce.
8. Cut yourself a slice of bread pudding, top with both sauces. Delicious (and despite all the steps, really easy to make.)
