I think I'm finally truly happy with this particular recipe after trying a few batches. This particular set was taken to

Buckeyes are peanut butter balls coated in chocolate. While I changed my ingredients slightly to my old recipe, the big thing I did here is change my procedure for how I made it.

Buckeyes are a great wonderful combination of peanut butter and chocolate in a bite or two bite sized bit of blissful indulgence. They are relatively easy to make, can be a little messy, but the end results are just so good.

The Filling
3 Tbsp Melted Butter
1 1/2 cups 10X powdered sugar
1 1/2 cup Peanut Butter
Put Peanut Butter in a bowl, mix in Sugar until the peanut butter is sort of dryish, not sticky, and not sticking together. Add in some of the butter, mix, and work together till moistened slightly and no white from the powdered sugar exists.
Refrigerate this filling for at least a couple of hours, or half an hour to an hour in the freezer.

Coating
Prep a double boiler (A double boiler is basically where you have a pan over a pot of simmering water, thus you are using the less dense heat of steam to have a very controlled and more gentle heat source. )
Add in 6 Tbsp Butter, cut in pieces, and allow to melt in the double boiler.
Remove from the double boiler and mix in 1 1/2 cups semi-sweet chocolate chips. Stir contently until the chocolate is all melted and smooth. Keep the double boiler setup available incase the chocolate starts to harden, then just add onto the boiler for a minute while stirring to loosen things up and remove from the heat.

Coating the balls
Prepare a sheet pan with a lining of parchment paper for the finished balls.
Take about 1 Tbsp of the filling (Worked out to be 3/4 of an ounce in weight) and roll into a ball (I use gloves to make it a little easier to work with, but not necessary.)
Drop the ball into the melted chocolate, using a couple of forks (For easy lifting) roll the ball to coat VERY GENTLY and then lift out and place on the paper. I usually could do about four to five balls rolled out, rolled, and placed on the paper without them falling apart to much.
If the dough gets to warm or to soft to work with place back in the freezer for half an hour and just remelt the chocolate on the double boiler when ready to go again.
Once they are all rolled and dipped place in the refrigerator for an hour to set firm. Enjoy! These are best stored in a cool location like your refrigerator in an air tight container.
By not allowing the chocolate to reach to high a temperature it won't turn hard to a point you have to add milk to make it more workable. This also means it'll setup nice and hard when cooled.
Enjoy!
You can substitute Nutella or part nutella for the peanut butter if you wish, they are quite good that way.
