2 cups sifted flour
2 tsp baking powder
2 tsp cinnamon
1 tsp baking soda
4 eggs
2 cups canned pumpkin
1.5 cups sugar
1 cup vegetable oil
1 cup chopped pecans
Icing:
1 cup powdered sugar
4 ounces cream cheese, room temperature
.75 tsp vanilla extract
2 tbsp unsalted butter, room temperature
1. Mix together sugar, oil, eggs, and pumpkin and mix.
2. Sift together all the dry ingredients. Mix with oil mixture and spread in a 15"x10" pan and bake at 350F for 30 minutes.
3. For the icing, mix the cream cheese and the butter together, and then the rest of the ingredients.
4. Make sure the bars are cooled before icing them. Keep the bars in the refrigerator before serving.
