A perfect fall comfort classic that always pairs well with a grilled cheese sandwich!
Ingredients:
3 ripe tomatoes
2tbsp olive oil
4-5 cloves garlic (sliced)
1 can tomato paste
1cup stock (use beef, chicken, or veggie)
1/4 cup cream
1tsp chilli powder
1tsp salt
2tsp pepper
1tsp paprika
1tsp sage
1tsp basil
1tsp rosemary
1tsp oregano
1tbsp parmesan cheese (grated)
2tsp Worcester sauce
Recipe:
1-prep your garlic and slice your tomatoes into quarters
2-in your pot: stew your tomatoes and garlic until firm and soft enough to mash
3-add tomato paste, cream, spices and stir to combine
4-add stock and mix well until smooth and soup-like
5-let cool for 5 minutes until serving
6-enjoy!
PS: I used fresh tomatoes from my garden in my recipe but feel free to use whatever tomatoes you’d like!
