A pox on my local grocery stores for not stocking Chives.
Said store was also very busy, people acting like Christmas was just around the corner. For shame!
This was also my first attempt since college over ten years ago and I don't even remember what I did that time.
Traditionally served in a glass but some people be saying my bowl looks better, so you get both.
Recipe (makes 2-3 portions)
200g Prawns
1 Head of Little Gem Lettuce, quartered and chopped
3tbsp Mayonnaise
1tbsp Tomato Puree
1tbsp Tomato Ketchup
1tsp Worcestershire Sauce
1tsp Horseradish
1/2 Lemon, juice and rind
1tsp Finely Chopped Chives or Parsley
1/2tsp Paprika
Salt and Pepper
1. Wash and drain the Prawns, if not already. Season with Salt, Pepper and Paprika.
2. In a medium sized mixing bowl or a large measuring jug, combine the Tomato Puree, Ketchup and Mayonnaise. Followed by the Worcester and Horseradish.
3. Finely grate and juice half a Lemon, adding that to the jug also.
4. Finish with a teaspoon of freshly chopped Chives or Parsley, and stir in the Prawns.
5. Lay a surface of chopped Gem Lettuce in a bowl or glass and top it with the Prawn Cocktail to serve.
