An idea recommended to me by a friend. Feedback from mother and grandmother says these aren't bad at all!
I thought they were okay, but I'm not much of an Apple person.
Recipe (makes 12-15, depending on size)
3 Cooking Apples, cored and cut into 8 slices each
1tbsp Butter
1tbsp Cornflour
1tsp Cinnamon
1/2tsp Ground Ginger
50g Demerara Sugar (plus extra for dusting)
1 Beaten Egg
1 Large Sheet of rolled Puff Pastry (about 475g?)
1. Put a large frying pan on medium heat and melt the Butter. Once it starts to sizzle, add the Apple slices and sauté them for 5-10 minutes, adding the Cinnamon, Ginger, Sugar and Cornflour halfway through.
2. Remove the pan from the heat and transfer the Apples into a bowl to cool down to room temperature.
3. Once the Apples have cooled, preheat your oven to 200*C and roll out your Puff Pastry, measure and cut it into 3" Squares. Make a shallow cut across each square, corner to corner, and lay two or three slices across one side of the cut, leaving enough space to fold it over.
4. Once your pastries are all arranged, fold each side over and seal it using a fork or your fingertips. Cut a small slit into the tops of each pastry, allowing steam to escape when they bake. Brush the tops of each pastry with some beaten egg and lightly dust the tops with some extra Sugar.
5. Arrange the pastries across two large, lined baking trays, allowing enough space for them to spread out. Bake at 200*C for 20-25 minutes, until golden brown. Let them cool for about ten minutes before eating hot, or allow them to cool all the way.
Note - I'd like to revisit this later down the line. A few things I think could do with some improvement.
