Even if erestal were to be responsible for the size differences, that doesn't explain why all UTO species resemble animals from Earth and human mithology in the case of the Katians, this is something I've always been curious but can't find anything about because there's no way in hell it's all some kind of "cosmic coincidence" but precursor shenanigans or something. It's an unexplored topic that I guess is left open for personal interpretation.
Take this with a grain of salt, but I saw a discussion where Hetzer implied that it's not a complete coincidence, and that there might have been precursor shenanigans...
But for now it's handwaved in-universe as a complete coincidence from convergent evolution. Out of universe it's obviously because a furry with a thing for macros made the setting.

Most species discover erestal around the time their industrial revolutions take place. The tech divergence starts from there, and anything from advanced gunpowder firearms to stuff like vehicles using fossil fuels are practically unheard of until humanity is discovered.
